Banana Oatmeal Pancakes

Banana oatmeal pancakes are a perfect mix of sweet and tender flavor and chewy texture. Combined together, mashed bananas and oats give these pancakes a lot of chewiness, and they can be served for breakfast and as a dessert. They will for sure make your tummy happy! Pancakes go well together with nuts, chocolate, and syrups. For this organic delicious oatmeal pancake recipe, you will need a few ingredients that you can play with.

PREP TIME: 7 mins COOK TIME: 10 mins TOTAL TIME: 17 mins YIELDS: 1 Serving
 3 small bananas, mashed
 1 tbsp lemon juice(freshly squeezed)
 2 eggs
 ½ tsp baking sodaoptional
 ½ pinch salt
 ½ tsp ground cinnamon
 100 g soaked oat
 ½ tsp ground nutmegoptional

Place all ingredients into a blender. Mix all the ingredients for 2 minutes in the blender while you heat your pan.


Put coconut oil onto a large nonstick pan and place over medium heat. Add pancake batter 1/3 cup at a time. Cook for about 2-3 minutes or until golden brown and tiny bubbles appear around the edges. Flip and cook 2 minutes more.


Serve pancakes with fresh fruit and coconut or agave syrup.  Enjoy your healthy and yummy breakfast!
