Creamy Mashed Carrot

A healthier option to mashed potatoe, avoid the starch that comes with the potatoes!

  • Yields: 4 servings


10 carrots

2 tbsp Organic Coconut Oil

1 dash Coconut Milk (milk of your choice)



(If not vegan, add gorgonzola or a cheese that you like!)


fresh garlic

1/2 lemon


1Boil your carrots until they're really soft

2Use your stick blender and mix until smooth and creamy

3Add the milk, the spices, the chopped garlic (+ the cheese) and squeeze the lemon all over

4MIX IT ALL with the blender again! Serve it tepid or put in the fridge for about 20 min to eat it cold!
